SIMPLICITY: FOR THE LOVE OF TRUFFLES

I am a chocoholic (anyone said truffles?).  I love coffee.  Put them together and this girl is in heaven.  When the sweet tooth monster attacks the intent is to make healthier choices about what I snack on.  And these chocolate and coconut bites fit the bill.  "Protein bites" have never been a go to choice for snacking but I see them more and more everywhere I go so decided to give them a try.  After all, they make the perfect portable snack.
 
 

 
 
 
If you like semi sweet chocolate then you will love these.  They have a softer consistency than normal truffles but still have the chocolaty richness.  And their dense and chocolaty flavors are only enhanced by the addition of some instant coffee and a dusting of cocoa powder.  Truly chocolate heaven.  I hope you give them a try.   
 

RECIPE FOR CHOCOLATE JAVA PROTEIN TRUFFLES (VEGAN)

 
INGREDIENTS:
 
 3/4 cups of vegan protein powder (I use Sunwarrior chocolate brown rice protein powder) 
6 tbsp Dutch cocoa
2 tbsp coconut oil
2 tbsp shredded unswettened coconut (optional but I like it)
4-5 tbsp almond milk
1-2 tbsp instant coffee
3 1/2 tbsp almond meal


STEPS:
 
1.  In a large bowl combine all the ingredients until well mixed.
2. Shape the dough into 1 inch balls.  Let them set in the refrigerator overnight.  Enjoy!
